Falling leaves, misty mornings, the cows have been brought in, bonfire night has gone off with a bang, it must be Autumn and time for apple pie.
I made a standard sweet shortcrust pastry, blind-baked the crust (controversial I know, but no-one wants a soggy bottom, do they?), cooked the apples before putting them in and made a lattice top. The lattice is easier than it looks, just a matter of cutting equal width strips, laying some of them side by side and weaving others through, then carefully placing on top of the pie. Brushed with egg yolk, I baked it for about 40 minutes.
The secret? Actually I don’t particularly like apple pie…
Would I make it again?
Probably, there are certain other people I know who really like apple pie.
